Improved paleo pancakes

I posted a recipe back in Feb for Paleo pancakes and then yesterday I made a small tweak using arrowroot flour to improve the recipe. Here it is…..

Ingredients
3/4 cup of arrowroot flour
5-6 eggs
2 ripe bananas
50g ground almonds
Teaspoon of cinnamon powder
Pinch of nutmeg

Cooking instructions
Blend all the ingredients until the mixture is smooth, heat up a good non stick pan with some olive oil on a LOW heat.

Because the mix now has arrowroot flour I found them much easier to flip and have pancakes a bit bigger, which means you can cook a batch much quicker. Also, the arrowroot will add additional carbs to the meal, so good if you’re in the middle of an intense training cycle. Enjoy.
